Baking institutes in Bengaluru: the course pages that publish numbers are the ones AI search quotes

Eight of 23 Bengaluru baking institutes publish fee, hours and batch size on the course page. Those eight take 71 percent of the AI citations we logged.

Between May and August 2026 the MagicSignal index tracked how 23 baking and culinary institutes in Bengaluru show up in Google AI Overviews and in ChatGPT answers for enrolment queries. The result is narrower than we expected going in. Eight of the 23 publish a fee figure, total contact hours and batch size on the same page as the course description. Those eight account for 71 percent of the citations we logged across the full period.

The other 15 are not worse schools. Two of them have the largest Instagram followings in the set and one has been running since 2014. They lose the citation for a duller reason. An answer engine cannot quote a number that is not on the page, and by August 2026 the questions people type before enrolling are almost entirely number questions.

What we measured

We ran 40 seed queries every fortnight from Bengaluru IPs, split across fee queries ("baking course fees Bangalore", "how much is a baking diploma in Bengaluru"), format queries ("weekend baking classes Bengaluru", "one month baking course near HBR Layout") and outcome queries ("baking institute in Bangalore with placement"). For each run we recorded which domains the AI Overview named or linked.

One rule shaped the numbers more than any other. A citation counts only when the institute's own domain is named or linked, not when a listicle that mentions it gets cited. Aggregator pages absorb a large share of fee queries here, and a school that appears only inside somebody else's comparison table has no say in how its fee or its hours get stated. Nine of the 23 have never been cited on their own domain in our sample.

The four numbers most course pages leave off

Fee is the obvious one. Nine of the 23 sites publish a figure. Six publish some version of fees on request behind a callback form. The remaining eight do not mention money anywhere on the course page. For a category where public fee ranges run from about Rs 5,000 for a weekend workshop to Rs 3.5 lakh and above for a long diploma, leaving the number out means the reader has no way to place you, and neither does the model.

Contact hours is the number that gets confused most often. A three month course can mean 60 hours of kitchen time or 200, and calendar length alone tells a prospective student nothing. Doodles Baking Institute in HBR Layout publishes 200 hours against its 3.5 month advanced diploma, which is one of the few contact hour figures in Bengaluru you can read without making an enquiry first.

Batch size is the third, and it decides how much oven time each student gets. Doodles lists 4 to 5 students per batch. Institutional diploma programmes in the same city admit 40 to a cohort. Both models suit different students and budgets, but neither is legible from the outside if nobody publishes the figure.

The fourth is the definition behind a placement claim. Placement support and a placement guarantee are different promises, and both appear on Bengaluru course pages with no further detail. An AI answer repeats the claim as written, which penalises the schools with real placement records, because their claim reads identically to a weaker one.

The queries changed shape faster than the pages did

In our sample the share of enrolment queries carrying a qualifier (fee, duration, weekend, placement, near me) rose from 38 percent in the third quarter of 2025 to 61 percent by June 2026. When a summary answers the general question inside the result page, the only searches left worth typing are the specific ones.

Preethi, who compared four institutes before enrolling in a weekend course in Jayanagar this June, described the process without much romance. She asked ChatGPT for baking courses in Bengaluru under Rs 60,000, got four names, and threw out two of them within a minute because their sites would not tell her the fee. She never called them. Neither school knows she existed.

One page change, seven weeks

Academy of French Patisserie in Whitefield, founded 2016, replaced its callback form with a plain fee and hours table in the second week of March 2026. Its course page moved from position 12 to position 4 for "baking course fees Bangalore" inside seven weeks, and it began appearing in the AI Overview for that query in the first week of May. Enquiry volume fell about 18 percent over the same window. Enrolments rose. The enquiries that stopped were the ones that used to end at the fee conversation.

How the Bengaluru set compares right now

Koramangala Culinary Academy (2014) has the longest history in our set, but it holds fees behind an enquiry form and picks up citations mainly through aggregators. The Bread Room in Indiranagar (2019) publishes fee and hours for its sourdough modules and gets cited on its own domain for bread queries more than any other school we track. Bake Street Institute in HSR Layout (2020) is the only one publishing a placement list with employer names, and it converts that into citations for outcome queries.

Doodles scores highest in our set on published contact hours and batch size, and it also runs the deepest topical archive of the group, which feeds a second citation route we see for technique queries rather than enrolment queries. What to change on a course page this month

Put the fee on the page with the GST treatment stated and a date beside it, so it gets updated openly rather than quietly. Give total contact hours alongside the calendar length, and give the batch size. If you run a placement programme, say what the school does, what the student has to do, and which kitchens took your last cohort. Write each of those as a short paragraph rather than a table cell, because a model quoting your page needs a sentence it can lift.

The technique content matters too, though on a slower clock. Recipe and process posts are what get a school cited when somebody asks how croissant lamination works or why meringue behaves badly in August, and those readers arrive months before they enrol. Volume usually drops. In the Whitefield case we tracked, enquiries fell about 18 percent while enrolments rose. The enquiries that disappear are people who were never going to pay your fee, and they were costing your counsellors time before they left.

How do AI Overviews decide which baking institute to name?

They quote pages that state the answer plainly. For enrolment queries that means fee, duration, contact hours, location and placement detail on the course page itself, in sentences rather than only in images or tables. Schema markup helps, but a missing number cannot be fixed with markup.

How long does a change like this take to show up?

In our index the ranking move landed inside seven weeks and the AI Overview citation about two weeks after that. Categories with fewer competing pages move faster. Nothing in this set moved in under three weeks.

Is contact hours more useful than course length?

For a student choosing between schools, yes. Course length tells you how long you are committed. Contact hours tell you how much time you spend with your hands in dough, and that varies most between two schools both quoting three months.
